Lemon Curd Tart

a friend recommended me the lemon cream tart from carpenter and cook.. finally got a chance to try it last week and it was really good! i recall seeing a lemon curd recipe from joyofbaking.com so i decided to try make it myself :P


the video was really helpful as it showed just how thick the curd should be after like 10mins of constant whisking..

didn't take a picture of the bowl of lemon curd i made but anyway, i thought it tasted a little sweet so perhaps will reduce the sugar by about 50g the next time i make it..

for tart shells, i used my own recipe:
200g butter
100g icing sugar
1 egg
380g plain flour
1 tsp vanilla essence

* Beat the first 3 ingredients until creamy then add in vanilla essence and plain flour to form a dough. 
* Press pastry in tart mould and bake at 180C for 15 minutes. Leave to cool before use.

tart shells baking in the oven... made like 40+ shells...



applied a layer of chocolate in the inner shell to prevent the crust from becoming soggy after curd is added in it...
final product!

Egg Tarts

My very first attempt at making egg tarts...

Got the recipe from the September 2011 issue of Simply Her magazine.. Looks easy enough and I had all the ingredients so without further thoughts, i went ahead to bake it..

This will probably be the last time i bake egg tarts.. why? because...
- i never liked to make pastries 'cos it's v time-consuming,
- it's tiring,
- i dun like to play around with dough...
- i dun like egg tarts. Period.

The recipe said it will yield 25 tarts.. i took that qty with a pinch of salt because the flour required was more than 1kg in total.. and guess what? in the end, i think i got about 60 tarts!!! and yes, i dun like egg tarts.. i never buy them unless i really really got the mood for it which is super rare.. well anyway, i gave 16 away, ate 3, sis ate 1, dad ate 1, mum ate 1 or 2.. and i still have many more...

before i forget, the pastry was a little tough.. but the taste of the egg was good.. first time baking and i thought i did ok.. could hv been better if i could tell when the egg part was cooked..

i think i still prefer baking cakes.. haha..
