Ombre Cheesecake




wanted to make a rainbow cheesecake but i didn't have enough cream cheese AND my mould wasn't high enough! so i decided to do ombre instead.. this would look nice if we garnish with cranberries or a strawberry but i had neither so i left it as it is..

i'm loving the colour gradient!!

Fudgy Chocolate Brownies



took me about 8 hours in the kitchen on x'mas to bake 5 batches of fudgy chocolate brownies! as i knew i was going to bake so many batches, i didn't add nuts to the mixture to reduce the amount of work that needed to be done.. to be honest, it was getting a little "painful" when i was baking the last 2 batches.. u see, i only have one 9" square cake tray.. and after each batch, i had to let it cool on a metal rack for a while (preferably for at least an hour or more) before removing the brownie and storing it in the fridge.. and my fridge is quite full so after each batch of brownie more or less hardened, i cut and packed it in the plastic bags and put them back in the fridge again..

then on sat morning, i packed them all in the paper bags with heart prints that i got from daiso.. this is my favourite part of it all i guess.. packing the stuff and making them pretty before sending them off.. :)

wanted to pack them in the same deco as i did for my previous posts but couldn't find the same materials.. :\

Baked Fish


bought a ready-made sauce from cold storage.. layered 4 fish fillets in a loaf tin, added the sauce, some carrots and celery and baked it in an oven toaster for at least half an hour.. added some lime zest over the top so it looks nicer in picture :P

Pink Ombre Cake

first attempt at baking an ombre cake.. i used the betty crocker white cake mix for the batter.. once the batter is ready, i divided them into 4 equal portions of about 260 ml each. tinted 3 portions with red food colouring.. 
i only had two 7" moulds so i could only bake 2 portions at a time for 18mins each..
buttercream was made and spread in between the "patties".. note to self, reduce the icing sugar in the buttercream by at least HALF.. (>_<)
crumb coat the cake and refrigerate it for a while...
then frost the whole cake and refrigerate it for a while again before serving..
use a clean knife and cut!
lurve the colour gradient!
this cake would have been perfect if the buttercream isn't so damn sweet.. but well, i have another box of cake mix so that's a second chance for me :)

first attempt at one this.. kinda obvious but i still gotta say that the quality and taste of the mangoes used must be really good in order to score at this dessert.. colour of dessert is also greatly affected by your mangoes.. mine's kinda pale.. not so sweet.. so i added some sugar to sweeten it up..

Hello Kitty 冰皮月饼 Snow Skin Mooncake








i think baking has become part of my life.. i'm like doing something almost once a week!

suddenly itchy backside.. thought of making snowskin mooncake.. and not just any snowskin mooncake, i really love the one my friend, Carol, makes! understand that she doesn't really bake to sell anymore, so i thick-skin go ask her for recipe and she willingly obliged! WAH SO HAPPY LEH!

she kept reassuring me that it's a foolproof recipe and indeed! only thing was, i didn't know what proportion of skin to wrap the filling with.. initially i used 1 part filling to 2 parts skin.. GRAVE MISTAKE! skin was super thick :\ so i did 1 to 1.. much better! then another friend told me skin should be slightly lesser than filing.. which i think is true also lah.. cos even 1 to 1, the skin still a bit on the thick side as compared to the ones sold commercially.. nonetheless, most importantly, the taste (i like) is there!!!!!!!!!!!! yumz! i'm lovin' it! my toughest critic also gave the thumbs up!

in case you're wondering what has the first 4 pic gotta do with the mooncake... i extracted pandan juice from pandan leaves by pounding them and squeezing (the hell!) out of them.. why did i do it? 'cause i forget to buy pandan essence and i was lazy to go get it.. so since my dad has 3 huge pandan plants and mum used to pound the pandan leaves to get the extract, i decided to try it for myself.. a lesson learnt - get the ready-made extract/essence.. (-_-) after pounding and squeezing like almost 20 leaves, i got like prob 1 tsp of juice? and my palms hurt from all the squeezing.. so the pandan flavour wasn't v strong..

anyway, will prob try a lychee or mango flavour next week :) wish me luck!

Orange-flavoured Chocolate Chip Cupcakes




Left office late today.. randomly decided to drop by phoon huat to replenish my supply of chocolate chips and bought a couple of new piping tips.. went home.. nuah a bit.. and decided to bake these.. haha.. really impromptu! i had butter in the fridge so didn't have to wait v long.. and all in all, it took me less than 2 hours to do these from scratch to packing them :) really easy recipe and this is one of the stuff that i'll eat 'cause the flavour isn't rich (i substituted orange essence with orange jucei) so it's quite easy on the palette..
