Lemon Blueberry Bread

Sis suggested for me to do some baking today since i had no plans.. saw this recipe from the website and ingredients seem relatively easy to find so decided to try it!
The texture is more like a pound cake rather than bread.. nonetheless, i'm quite happy with the taste! the thing is, recipes featured in joyofbaking.com are usually quite yummy :) this is one recipe for keeps!

Fried Ikan Bilies
Garlic + Ginger
Ikan Bilies - rinse and dry
Fry with a generous amount of oil.
Sprinkle with sugar and serve :)

Braised Pork Leg
Pork leg (I bought about 1.3kg worth)
10 cloves of garlic
2 thumb-size ginger
Spices
From top (clockwise):
* Cloves
* Cinnamon sticks
* Star anise
* Coriander seeds
* (middle) Cardamom
(thanks to Jane for helping me identify the spices!)
* Bathe the pork leg in boiling water. Discard water.
* Pan-fry pork leg in a non-stick pan. (Don't need to add oil).
* Add water and dark soy sauce.
* Bring to boil.

* Transfer pork leg mixture to a slow-cooker.
* Add in spices, garlic and ginger.
* Add pepper and about 2 tbsp of sugar.

You may wish to add in hard-boiled eggs and braise it together with the pork leg.

Cheng Thng
my first attempt at cheng thng.. it's pretty simple to make except the preparation takes a LOT of time and effort.. lucky i had my aunty to help me..
ingredients include bai guo, lotus seed, pong dai hai, white fungus, barley, dried longan, candied winter melon, pandan leaves, brown rock sugar and of course water.
- Boil till soft.
- Sprinkle sugar and store in box. Keep this in fridge until ready to use.
莲子
- Soak in hot water for about 15mins.
- Drain and remove stem in the middle.
- Boil till soft.
- Sprinkle sugar and store in box. Keep this in fridge until ready to use.
Pong Dai Hai
- Soak in water till expanded.
- Drain and remove veins, seed and hard skin.
- Keep this in fridge until ready to use.
White Fungus
- Rinse and soak in water till expanded.
- Drain and cut away the hard part.
Method
- Fill a pot with water.
- Add in barley and white fungus. Bring to boil. Add pandan leaves, simmer and cook till barley opens a little.
- Add in candied winter melon.
- Add in rock sugar to taste.
- Lastly, add in白果, 莲子, Pong Dai Hai and dried longans into the pot.
- Bring to boil and turn off fire. (Note: If your 白果 and 莲子 are not soft enough, you may wish to boil the mixture longer.)

chuk bi phng (glutinous rice)
last min decision to make this.. my friend's confinement lady made this the other day and i recalled mum made it before so i asked mum teach me how to do make it..
the ingredients are pretty simple but it's time-consuming cos u gotta soak the stuff a while before slicing and mincing them..
the taste is not bad.. but i took really long to steam it.. i guess it's better to soak the glutinous rice overnight prior to cooking it.. i only soaked it for 3 hours so i steamed the rice for like 1.5 hours!

walnutty
Walnut Cake
The texture of the cake was really good this time round! it also "poofed" quite a bit in the oven until i thought batter was going to flow out of the mould! added chocolate rice this time round.. this really tastes yummy!
Chocolate Walnut Cupcakes
Used my same old chocolate cupcake recipe.. added walnuts instead of chocolate chips this time.. juz out of the oven.. for the younger cousins :) hope they like it!
